Basil Raspberry Vinaigrette Salad

Summer IS berry season.  Not only are these functional foods delicious and contain an abundance of compounds that promote health, such as carotenoids and flavonoids, but many can be grown in your background or purchased from local vendors.

Basil Raspberry Vinaigrette Dressing:
About 16 servings

3/4c extra virgin olive oil
1/4c Apple cider vinegar
1/4c Water
1/2c Raspberries
1tbs Raw local honey
1tbs Basil
1tsp Dijon mustard
Himalayan salt, to taste

Add all ingredients to a food processor and blend to desired consistency.
Store remainder dressing sealed in fridge for up to a week.

  

Summer Salad:
4 servings

5oz Baby Lettuce mix
1/2 head Radicchio, chopped
2 Endive, chopped
1/4c Walnuts, chopped
2oz Dried Figs, no added sugar
1lb Rotisserie Chicken, shredded
1/4c Basil Raspberry Vinaigrette Dressing

Add all ingredients in a large bowl, top with dressing and mix.

Enjoy!
